Pineapple pineapple fried rice by Jumi Tan



Step 1: Chicken thigh, cut them into bite size, marinate with sesame oil, sugar, salt and pepper.

Step 2: Pan fried chicken without oil in the pan. Add in sliced chinese sausage too. Soon U will see a pool of oil gathered at the pan

Step 3: Push meat to one side of the pan and add in minced garlic and shallots, brown them. Also some finely chopped chili

Step 4: In a small bowl, add in pineapple juice (from the can of pineapple cubes), tumeric powder, fish sauce, sesame oil, pepper. Mixed well and set aside

Step 5: Place in cooked rice and pour sauce from STEP 4 over it. Stir fried and make sure everything is evenly combine

Step 6: Add in pineapple, cashew nuts (which I replace by pistachio cos I dont have cashew nuts at home) and raisins. Mixed well.

Step 7: Toss in chopped spring onion. Off fire. U can garnish with pork floss or coriander if U want to. Serve
