Ingredients
4 large russet potatoes
2 cups broccoli florets
1 stalk spring onion - chopped
1 egg
25gm butter
1tsp salt
Dash of pepper
Shredded cheese
Method
Peel and chopped potatoes into cubes and steamed till cooked. Transfer to a big mixing bowl and set aside to cool slightly. Mash once cool.
Dice/chopped broccoli finely and transfer all to the mashed potatoes.
Add the chopped spring onion, butter, egg, salt n pepper into the mashed potatoes n broccoli. Stir and mix well.
Scoop a heaping tablespoon of the mixture and place into a cookie cutter and gently flatten with a spoon. Topped with some shredded cheese.
Continue until the mixture is used up.
AF at a temp of 180 for 10mins till top slightly brown.
Serve hot and enjoy.
